If you’re looking for a super easy to make, low sugar, healthy breakfast option, this is it! This granola mix is perfect to sprinkle on yogurt, fruit or enjoy with a splash of your favourite milk!

Ingredients

  • 2 cups old-fashioned rolled oats 

  • 1⅓ tablespoons Tribal Moon Cacao powder

  • 3 tablespoons desiccated coconut

  • 3½ tablespoons coconut oil – melted

  • 4 tablespoons honey

  • ¼ teaspoon fine sea salt

Instructions

  1. Preheat the oven to 300 F/ 150 C.
  2. In a large bowl combine the oats,cacao powder, desiccated coconut and salt. Stir well.
  3. Pour over the coconut oil and honey and stir the mixture thoroughly until it becomes a little sticky and all the oats are coated in the cacao mixture (you can do this using the back of a large spoon).
  4. Pour the mixture onto a medium size non-stick baking tray, spread evenly without pressing the mixture and bake for 15 minutes.
  5. Remove from the oven, stir a little using a spatula ( Try not to break up the clusters), increase the oven temperature to 350 F/ 180 C and bake for a further 8 minutes.
  6. Remove from the oven and leave to cool in the tray. Break the mixture up only when it’s cooled completely! The mixture will harden and crisp up as it cools.

Notes:
  • Do NOT stir your freshly baked granola.  Let it cool completely first so it has a chance to crisp up before you use it.
  • You can add a bit more honey to suit your individual preference.  Alternatively use maple syrup or agave syrup.
  • Store in an airtight container for up to a week.

IMPORTANT CACAO PREPARATION NOTES:

Depending on what type of recipe you are creating, we always try and prepare cacao in the easiest possible way with the greatest amount of care. So here are a few helpful hints on how to do that.

  • If you need the cacao in more of a powder-type form for your recipe, just blitz larger chunks of Tribal Moon Cacao in a Nutri-Bullet, Thermomix, or Food Processor for 10 seconds. Then it is all ready to go without needing to chop or grate it. Easy. 😊
  • If you need to turn your cacao into more of a liquid type of consistency, simply pour boiling water into a pot with the cacao and stir over heat until it melts. NEVER LEAVE THE CACAO as it begins to get hot. If it starts to steam, that is as hot as you want to get. Try to NEVER RAISE the temperature of the cacao above 87 Degrees Celsius as it will lose some of its medicinal qualities.
